Ingredients
  1. 1 3/4 cups sifted flour
  2. 1/4 cup sugar
  3. 2 1/2 tsp baking powder
  4. 3/4 tsp salt
  5. 3/4 cup milk
  6. 1 well beaten egg
  7. 1/3 cup oil
  8. 1 cup blueberries
  9. 2 tbsp sugar
  10. 1 tsp grated lemon peel
Instructions
  1. Sift together flour, sugar, baking powder and salt into a bowl.
  2. Make a well in the centre and add milk, egg, and oil.
  3. Add to dry ingredients.
  4. Toss blueberries and sugar and add with lemon rind.
  5. Fill grease pans 1/2 full and bake at 400F for 25 minutes.
  6. While still warm, dip tops in melted butter and then in sugar.

  1. Beat egg whites with lemon juice.

  3. Beat until stiff.
  4. Fold berry mixture into egg white mixture and beat at high speed for 10-15 minutes until almost double the volume.
  5. Pour into glass serving bowl and cover with plastic wrap.
  6. Freeze for 24 hours.
  7. Remove 15 min. before serving.
