Ingredients
- 1 3/4 cups sifted flour
- 1/4 cup sugar
- 2 1/2 tsp baking powder
- 3/4 tsp salt
- 3/4 cup milk
- 1 well beaten egg
- 1/3 cup oil
- 1 cup blueberries
- 2 tbsp sugar
- 1 tsp grated lemon peel
Instructions
- Sift together flour, sugar, baking powder and salt into a bowl.
- Make a well in the centre and add milk, egg, and oil.
- Add to dry ingredients.
- Toss blueberries and sugar and add with lemon rind.
- Fill grease pans 1/2 full and bake at 400F for 25 minutes.
- While still warm, dip tops in melted butter and then in sugar.
