Ingredients
  1. 1 4lb chicken
  2. 4 quarts water
  3. 1 onion
  4. 3 carrots
  5. 2 stalks celery
  6. 1/2 parsnip
  7. Salt and pepper
  8. Dill
Instructions
  1. Scald Chicken.
  2. Place in cold water and bring to boil.
  3. Skim.
  4. Turn heat down and add onion, carrots, celery and parsnip.
  5. Salt and pepper to taste. Cover and simmer at least one hour.
  6. Garnish with dill.
