Ingredients
- 1 1/4 lbs fresh ricotta cheese
- 4 eggs beaten
- 1/2 cup sugar
- 2 tbsp currants, soaked 20 minutes in rum
- 2 tbsp toasted slivered almonds
- Grated rind of 1 lemon
- 2 tbsp bread crumbs
Instructions
- Drain cheese in a sieve over a bowl.
- Preheat oven to 350F.
- Butter well a 6 cup pudding mold.
- Combine the cheese, eggs and sugar and beat until smooth.
- Add the remaining ingredients except bread crumbs and combine thoroughly.
- Sprinkle the bread crumbs over the buttered pan.
- Pour in the cheese mixture and bake until done (35 - 45 min).
- Allow to cool before unmolding.
