Ingredients
  1. 1 1/4 lbs fresh ricotta cheese
  2. 4 eggs beaten
  3. 1/2 cup sugar
  4. 2 tbsp currants, soaked 20 minutes in rum
  5. 2 tbsp toasted slivered almonds
  6. Grated rind of 1 lemon
  7. 2 tbsp bread crumbs
Instructions
  1. Drain cheese in a sieve over a bowl.
  2. Preheat oven to 350F.
  3. Butter well a 6 cup pudding mold.
  4. Combine the cheese, eggs and sugar and beat until smooth.
  5. Add the remaining ingredients except bread crumbs and combine thoroughly.
  6. Sprinkle the bread crumbs over the buttered pan.
  7. Pour in the cheese mixture and bake until done (35 - 45 min).
  8. Allow to cool before unmolding.
