Ingredients
- 1 1/2 cups chopped pitted dates
- 1/4 cup sugar
- 1 cup orange juice
- 1 1/4 cups quick cooking oats
- 3/4 cup brown sugar
- 1 cup flour
- 1/4 cup toasted chopped pecans
- 1/2 tsp cinnamon
- 1/3 cup vegetable oil
- 1/4 cup water
Instructions
- Preheat oven to 350F.
- Spray an 8x8 pan with vegetable spray.
- Combine in a sauce pan, dates, orange juice and sugar.
- Bring to boil and simmer at medium heat about 15 minutes or dates are soft and liquid absorbed. Mash and let cool.
- In a bowl, stir together, oats, cinnamon, oil and water.
- Pat 1/2 of mixture in prepared dish.
- Put in the date mixture and sprinkle the other 1/2 oat mixture over the dates.
- Bake in the oven for 25 minutes or the mixture is golden.
- Cool.
