Ingredients
- 6 eggs separated
- 1/2 cup + 2 tsp sugar
- 6 tbsp cocoa
Instructions
- Beat yolks till light and fluffy.
- Stir in cocoa.
- Beat whites till stiff peaks.
- Gently pour the egg whites into cocoa mixture.
- Spread on prepared jelly roll pan.
- Bake at 400F for 25 minutes.
- Sprinkle 2 tsp sugar on a tea towel.
- Invert cake onto towel and roll up quickly.
- Cool 20 minutes.
Filling
- Combine 1 cup whipping cream, 1/4 cup sugar and 2 tbsp cocoa.
- Chill well.
- Unroll cake.
- Spread 1/2 filling.
- Reroll and spread the remaining mixture.
