Ingredients
- 1 tbsp sugar
- 3 tbsp thawed frozen orange juice
- 3 tbsp oil
- 1 tbsp vinegar
- 1/8 tsp dry mustard
- salt & hot pepper sauce
- 1/4 cup mayonnaise
- 2 cups cooked rice
- 1 cup sliced celery
- 1/4 cup sliced pitted black olives
- Lettuce leaves
- 2 tbsp toasted almonds
- Avocado slices
- orange sections
- 2 cups cooked cubed chicken
Instructions
- Combine sugar, orange juice, oil, vinegar, mustard, salt and hot pepper sauce to taste.
- Blend in mayonnaise.
- Add rice, chicken, celery and olives.
- Toss lightly, cover and chill 1 hour.
- Serve on lettuce leaves sprinkled with almonds.
- Garnish with avocado slices and orange sections.
