Ingredients
  1. 1 tbsp sugar
  2. 3 tbsp thawed frozen orange juice
  3. 3 tbsp oil
  4. 1 tbsp vinegar
  5. 1/8 tsp dry mustard
  6. salt & hot pepper sauce
  7. 1/4 cup mayonnaise
  8. 2 cups cooked rice
  9. 1 cup sliced celery
  10. 1/4 cup sliced pitted black olives
  11. Lettuce leaves
  12. 2 tbsp toasted almonds
  13. Avocado slices
  14. orange sections
  15. 2 cups cooked cubed chicken
Instructions
  1. Combine sugar, orange juice, oil, vinegar, mustard, salt and hot pepper sauce to taste.
  2. Blend in mayonnaise.
  3. Add rice, chicken, celery and olives.
  4. Toss lightly, cover and chill 1 hour.
  5. Serve on lettuce leaves sprinkled with almonds.
  6. Garnish with avocado slices and orange sections.
