Ingredients
- 1 4lb chicken
- 4 quarts water
- 1 onion
- 3 carrots
- 2 stalks celery
- 1/2 parsnip
- Salt and pepper
- Dill
Instructions
- Scald Chicken.
- Place in cold water and bring to boil.
- Skim.
- Turn heat down and add onion, carrots, celery and parsnip.
- Salt and pepper to taste. Cover and simmer at least one hour.
- Garnish with dill.
