Ingredients
  1. 1 cup mashed bananas
  2. 1/2 cup oil
  3. 1/2 cup sugar
  4. 1 egg beaten
  5. 1 tsp vanilla
  6. 1 1/2 cup whole wheat flour
  7. 1 tsp baking powder
  8. 1 tsp baking soda
  9. 1 tsp salt
  10. 1/2 cup raisins
Instructions
  1. Combine bananas, oil, and sugar.
  2. Mix well.
  3. Beat in eggs and vanilla.
  4. In a separate bowl, sift together flour, baking powder, soda and salt.
  5. Stir in raisins.
  6. Lightly stir the dry mixture into the banana mixture; just until moist.
  7. Spoon batter into greased muffin pans and bake at 350F for 20 minutes.
