Ingredients
- 1 cup mashed bananas
- 1/2 cup oil
- 1/2 cup sugar
- 1 egg beaten
- 1 tsp vanilla
- 1 1/2 cup whole wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1/2 cup raisins
Instructions
- Combine bananas, oil, and sugar.
- Mix well.
- Beat in eggs and vanilla.
- In a separate bowl, sift together flour, baking powder, soda and salt.
- Stir in raisins.
- Lightly stir the dry mixture into the banana mixture; just until moist.
- Spoon batter into greased muffin pans and bake at 350F for 20 minutes.
