Ingredients
- 1 lb Spinach cut up
- Sugar to taste
- 1 whole onion
- Salt to taste
- 2 quarts water
- Juice of one lemon
- 1 egg beaten
- 1/2 cucumber diced
- 3 shallots diced
Instructions
- Add spinach, salt and onion to water.
- Cook for 1/2 hour.
- Remove onion and let cool.
- Add beaten egg, sugar, lemon juice, shallot and cucumber to soup.
- Serve cold with sour cream.
