Ingredients
- 1 envelope gelatin
- 3 cups rhubarb
- 1/2 cup cold water
- 1 cup sugar
- 2 tsp lemon juice
- 1 cup whipping cream whipped - flavoured with red food colouring.
Instructions
- Combine rhubarb, 1/4 cup water and sugar in a saucepan and simmer covered until the rhubarb is soft.
- Soften Knox gelatin in 1/4 cup water.
- Remove the rhubarb from heat and stir in gelatin until dissolved.
- Add lemon juice.
- Chill until mixture mounds when dropped from a spoon.
- Fold in whipped cream and add a few drops of red food colouring until it turns pink.
- Turn into 4 cup bowl.
- Chill to set.
- Serve topped with nutmeg flavoured whipping cream.
