Ingredients
  1. 6 eggs separated
  2. 1/4 tsp salt
  3. 3/4 cup sugar
  4. 1/3 cup matzo meal
  5. 1 1/2 cups grated carrots
  6. 1/4 cup fine ground almonds
  7. 2 tbsp wine.
Instructions
  1. Beat eggs with salt until fluffy.
  2. Beat egg yolks until thick.
  3. Gradually add sugar while continue to beat.
  4. Fold in matzo meal, carrots, almonds and wine.
  5. Carefully fold in egg whites.
  6. Pour into 2 1/2 quart greased baking dish.
  7. Bake at 350F for 1 hour.
