Ingredients
- 4 Egg whites
- 2/3 cup sugar
- 1/8 tsp cream of tartar
- 1/2 tsp vanilla.
Instructions
- Beat egg whites and add sugar slowly.
- Add cream of tartar and vanilla.
- Mix 1/3 cup icing sugar with 3 tbsp sugar and pinch of salt.
- Gradually sieve over egg whites and blend.
- Draw three circles on parchment paper.
- Turn paper over.
- Spoon into pastry bag ½ full.
- Make the base then the sides.
- Bake at 200F for 1 ½ to 2 hours.
- Test after 1 ½ hrs.
- If cookie is dry turn off oven and cool in oven.
Notes
- If they turn beige, the oven is too hot.
