Ingredients
  1. 4 Egg whites
  2. 2/3 cup sugar
  3. 1/8 tsp cream of tartar
  4. 1/2 tsp vanilla.
Instructions
  1. Beat egg whites and add sugar slowly.
  2. Add cream of tartar and vanilla.
  3. Mix 1/3 cup icing sugar with 3 tbsp sugar and pinch of salt.
  4. Gradually sieve over egg whites and blend.
  5. Draw three circles on parchment paper.
  6. Turn paper over.
  7. Spoon into pastry bag ½ full.
  8. Make the base then the sides.
  9. Bake at 200F for 1 ½ to 2 hours.
  10. Test after 1 ½ hrs.
  11. If cookie is dry turn off oven and cool in oven.
Notes
  1. If they turn beige, the oven is too hot.
