Ingredients
- 3 lbs sweet potato baked
- 3 apples
- 1/4 cup lemon juice
- 4 tbsp butter
- 1/4 cup brown sugar
- 1/2 cup maple syrop
- 2 tbsp dark rum
- 1/2 tsp cinnamon
- 1/4 tsp ground mace
Instructions
- Preheat oven to 400F.
- Place oven rack in highest position.
- Butter a 14x9 inch dish.
- Let potatoes cool slightly then cut off the ends.
- Pull off peel with a dull knife and slice diagonally to 1/4 inch.
- Peel and core apples; slice longwise in thin slices.
- Toss in bowl with lemon juice.
- Combine with sliced potatoes in alternate slices.
- In a saucepan, combine butter, maple syrup, sugar, rum, cinnamon and mace.
- Stir over moderate heat until sugar is dissolved.
- Pour slowly over apple/potato mixture so that all is moistened.
- Bake in upper third of oven for 30 minutes; basting frequently.
