Ingredients
- 1 cup buttermilk
- 1 cup quick cooking oats
- 1 egg, beaten
- 1/2 cup brown sugar
- 1/3 cup melted butter
- 1/2 cup shredded carrots
- 1 tsp vanilla
- 1 tbsp grated orange rind
- 1 cup flour
- 3 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
Instructions
- Pour buttermilk over oats in a mixing bowl.
- Add egg, sugar, butter, carrots, vanilla and orange rind.
- Mix thoroughly.
- Combine flour, baking powder, soda and salt.
- Add to oat mixture stirring until just combined.
- Spoon into greased muffin tins 3/4 full.
- Bake at 400F for 20 minutes.
