Ingredients
  1. 1 cup buttermilk
  2. 1 cup quick cooking oats
  3. 1 egg, beaten
  4. 1/2 cup brown sugar
  5. 1/3 cup melted butter
  6. 1/2 cup shredded carrots
  7. 1 tsp vanilla
  8. 1 tbsp grated orange rind
  9. 1 cup flour
  10. 3 tsp baking powder
  11. 1/2 tsp baking soda
  12. 1 tsp salt
Instructions
  1. Pour buttermilk over oats in a mixing bowl.
  2. Add egg, sugar, butter, carrots, vanilla and orange rind.
  3. Mix thoroughly.
  4. Combine flour, baking powder, soda and salt.
  5. Add to oat mixture stirring until just combined.
  6. Spoon into greased muffin tins 3/4 full.
  7. Bake at 400F for 20 minutes.
