Ingredients
- 3/4 cup butter
- 1/2 cup fine sugar
- 1/2 cup brown sugar
- 1 egg
- 1/2 tsp vanilla
- 1/2 cup dried, cutup apricots
- 2 cups pastry flour
- 1/2 cup chopped almonds
- 1 1/2 tsp baking powder
- 1/8 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp grated nutmeg
- 1/4 tsp ground allspice
Instructions
- Line an 8 inch square pan with wax paper, bottom and sides.
- Sift together flour, baking powder, soda, salt, cinnamon, nutmeg and allspice.
- Cream the butter and gradually blend in sugar and brown sugar.
- Add egg.
- Mix well.
- Mix in vanilla, apricots and almonds.
- Add dry ingredients slowly and mix well.
- Turn mixture into a prepared pan, cover and chill overnight.
- Next day preheat oven to 425F.
- Remove dough from pan and cut into three strips.
- Then cut strips crosswise in 2 inch slices.
- Arrange slices on an ungreased cookie sheet.
- Bake in preheated oven for 7 to 9 minutes.
- Cool on cake rack.
- Store in covered tin.
