Ingredients
- 1 cup butter
- 1 1/2 cup sugar
- 4 eggs
- 1 tsp vanilla
- 2 tbsp lemon juice
- 2 tbsp grated lemon rind
- 2 1/2 cups flour
- 1/2 cup cornmeal
- 2 tsp baking powder
- 1 tsp soda
- 1 cup milk
- 1 1/2 cup blueberries
Instructions
- Cream butter and sugar.
- Add eggs one at a time.
- Beat well.
- Beat in vanilla, lemon juice and rind.
- Reserve 2 tbsp flour for blueberries.
- Combine the remaining flour, corn meal, baking powder and baking soda.
- Add dry ingredients to butter mixture alternately with milk.
- Beginning and ending with dry ingredients.
- Toss blueberries with flour and stir gently into batter.
- Bake in greased tins at 350F for 30 minutes.
- Remove from pans and cool.
