Cake
- 6 eggs
- 250 ml sugar
- 5 ml vanilla
- 125 ml flour
- 125 ml cocoa
- 125 ml oil
Filling
- 2 tins sweet pitted cherries
- 75 ml cherry brandy
- 200 ml reserved cherry juice
- 1 tbsp corn starch
Topping
- 500 ml whipping cream
- 75 ml icing sugar
Cake
- Grease or spray with PAM, 3 round cake pans, line with wax paper and spray.
- In large bowl of electric mixer, place eggs, sugar and vanilla.
- Beat on high for 10 minutes.
- Sift together flour and cocoa.
- Sift a little at a time over the egg mixture and fold with a spatula.
- Gradually fold in oil.
- Pour batter in pans and bake at 275F for 30 minutes.
- Cool.
Filling
- Drain cherries, reserve juice.
- Pour brandy over the cherries and let stand for 2 hours.
- In a small pan, combine corn starch gradually with the cherry juice.
- Add cherry mixture.
- Heat to boiling stirring constantly.
- Cook for one minute or until clear.
- Chill the mixture.
Topping
- Beat cream until it thickens.
- Sift icing sugar over whipping cream and beat until it begins to peak.
Assembly
- Place one layer on serving plate and spread 1/3 of the cherry mixture over.
- Spread with 1/4 of the whipping cream topping.
- Repeat with 2nd and 3rd layers.
- Ice sides with the last 1/4 of topping.
- Garnish with semi sweet chocolate shavings.
