Crepe
- 3 eggs
- ½ tsp salt
- 1 cup water
- 3 tbsp potato starch
Filling
- 2 cups dry cottage cheese
- 1 egg
- 1/2 tsp salt
- 2 tsp sugar
- 1 tbsp melted butter
- Finely chopped well drained canned pineapple or raisins
Crepe
- Beat eggs until foamy.
- Blend in ns
- Mix ingredients well.
- Preheat a 5 inch skillet, grease lightly, spoon out enough batter to spread over pan.
- Brown on one side only.
- Turn out on board.
Filling
- Place 1 tbsp filling on a crepe and fold like envelope and tuck in sides.
- Line lightly greased baking dish with blintzes.
- Bake at 350F to brown.
