Ingredients
- 2 cups boiling water
- 2 cups natural bran
- 1 cup raisins
- 1/4 cup wheat germ
- 2 cups flour
- 2 cups whole wheat flour
- 5 tsp baking soda
- 1 tsp salt
- 1 1/2 cups butter
- 2 1/2 cups sugar
- 6 eggs
- 4 cups sour milk with 4 tbsp vinegar
- 4 cups quick cooking oats
- 1 cup chopped dates
- 1/2 cup chopped dried apricots
Instructions
- Have 2 medium and one large bowl ready.
- Preheat oven to 375F.
- Pour water over bran, raisins and wheat germ in medium bowl.
- Mix and set aside.
- Stir together in another medium bowl, flour, baking soda and salt.
- Set aside.
- Cream butter and sugar in the large bowl.
- Beat in eggs one at a time.
- By hand, stir in sour milk, bran mixture, oats, flour mixture, dates and apricots.
- Combine well.
- Spoon into greased muffin tins; bake for 30 minutes.
- If small muffin tins, bake for 20 minutes.
- Batter will stay fresh in fridge for 1 month.
