Ingredients
- 2 tbsp oil
- 1 large chopped onion
- 5 carrots thinly sliced
- 3 large sweet potatoes
- 1 small can apple sauce
- 1/3 cup chopped prunes
- 1/3 cup dried apricots
- 1/2 cup orange juice
- 1 1/2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp salt
Instructions
- Preheat oven to 350F.
- Microwave potatoes, peel and slice.
- Heat oil in large skillet.
- Saute onions.
- Add carrots and continue to cook until golden.
- Add the rest of the ingredients.
- Transfer to baking dish and bake for 30 minutes.
