Ingredients
  1. 2 tbsp oil
  2. 1 large chopped onion
  3. 5 carrots thinly sliced
  4. 3 large sweet potatoes
  5. 1 small can apple sauce
  6. 1/3 cup chopped prunes
  7. 1/3 cup dried apricots
  8. 1/2 cup orange juice
  9. 1 1/2 tsp cinnamon
  10. 1/2 tsp ground ginger
  11. 1/2 tsp salt
Instructions
  1. Preheat oven to 350F.
  2. Microwave potatoes, peel and slice.
  3. Heat oil in large skillet.
  4. Saute onions.
  5. Add carrots and continue to cook until golden.
  6. Add the rest of the ingredients.
  7. Transfer to baking dish and bake for 30 minutes.
