Ingredients
- 1/2 cup peanut butter
- 1/2 cup butter
- 1 cup brown sugar
- 1 egg
- 1 1/2 tsp vanilla
- 1 cup whole wheat flour
- 3/4 tsp salt
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1 cup rolled oats
- 1 cup sated chopped peanuts
- 3/4 cup raisins optional
Instructions
- Preheat oven to 375F.
- Lightly grease cookie sheet.
- Cream the butters in a large mixer bowl.
- Beat in sugar, egg and vanilla.
- Blend the flour with salt, baking powder and soda.
- Stir into butter mixture.
- Stir in remaining ingredients.
- Form into small balls and place on cookie sheet.
- Flatten with floured fork.
- Bake for 8 minutes.
Freezer Cookies
- Firm dough into 1½ inch rolls.
- Wrap and freeze.
- Slice thin and bake at 350F for 10 minutes.
