Ingredients
  1. 3 eggs beaten
  2. 1 cup milk
  3. 250 ml dry cottage cheese
  4. 250 ml matzo meal
  5. 1/2 tsp salt
  6. 2 tsp sugar
Instructions
  1. Beat eggs well.
  2. Blend in milk and cottage cheese.
  3. Combine matzo meal, salt and sugar.
  4. Add to cheese mixture, beating just to blend.
  5. Preheat skillet.
  6. Grease lightly and spoon batter on pan.
  7. Brown latkes on both sides.
  8. Serve with berries.

Ingredients
  1. 3/4 cup minced onion
  2. 6 tbsp margarine
  3. 4 cups mashed potato
  4. 1/2 cup potato starch
  5. 3 eggs
  6. 1 tsp salt
  7. 1/4 tsp pepper
Instructions
  1. Brown onions in 4 tbsp margarine.
  2. Cool and set aside.
  3. Add 2 tbsp margarine to mashed potatoes, potato starch, eggs and seasonings.
  4. Knead to blend thoroughly.
  5. Form dough into 2 inch rounds.
  6. Flatten.
  7. Place a tsp of brown onion on each.
  8. Enclose onions by pinching sides of potato mixture.
  9. Place on greased cookie sheet and bake at 375F for 25 minutes.

  1. 2 lbs potato
  2. 2 egg whites, lightly beaten
  3. 1 tbsp flour
  4. 1 tsp salt
  5. 1/4 tsp pepper
  6. 2 oz lox
  7. 1 cup chopped green onions
  8. 3 tbsp oil or spray
Instructions
  1. Scrub potatoes, grate and squeeze.
  2. Whisk together, eggs, flour and seasoning.
  3. Add salmon and onions.
  4. Oil or spray a large baking sheet.
  5. Drop latkes with large spoon and flatten.
  6. Bake in centre oven at 450F until edges are brown.
  7. Turn them over and bake another 7 minutes.
  8. After freezing, reheat at 375F for 15 minutes.

Ingredients
  1. 3 lbs sweet potato baked
  2. 3 apples
  3. 1/4 cup lemon juice
  4. 4 tbsp butter
  5. 1/4 cup brown sugar
  6. 1/2 cup maple syrop
  7. 2 tbsp dark rum
  8. 1/2 tsp cinnamon
  9. 1/4 tsp ground mace
Instructions
  1. Preheat oven to 400F.
  2. Place oven rack in highest position.
  3. Butter a 14x9 inch dish.
  4. Let potatoes cool slightly then cut off the ends.
  5. Pull off peel with a dull knife and slice diagonally to 1/4 inch.
  6. Peel and core apples; slice longwise in thin slices.
  7. Toss in bowl with lemon juice.
  8. Combine with sliced potatoes in alternate slices.
  9. In a saucepan, combine butter, maple syrup, sugar, rum, cinnamon and mace.
  10. Stir over moderate heat until sugar is dissolved.
  11. Pour slowly over apple/potato mixture so that all is moistened.
  12. Bake in upper third of oven for 30 minutes; basting frequently.
