Ingredients
- 1 cup whole wheat flour
- 1 cup flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/8 tsp all spice
- 1 cup carrots grated
- 1 tsp orange rind grated
- 1 egg
- 1 cup milk
- 1/4 cup molasses
- 1/4 cup melted butter
- 1/2 cup raisins
- 1/4 cup chopped nuts
Instructions
- Measure dry ingredients into a large bowl.
- Stir in carrots and orange rind.
- In a small bowl, beat eggs, milk, molasses and butter.
- Add to dry ingredients.
- Stir to moisten.
- Fold in raisins and nuts.
- Fill greased muffin tins 3/4 full and bake at 400F for 25 minutes
