Ingredients
  1. 1 cup whole wheat flour
  2. 1 cup flour
  3. 1 tbsp baking powder
  4. 1/2 tsp salt
  5. 1/4 cup brown sugar
  6. 1/2 tsp cinnamon
  7. 1/8 tsp all spice
  8. 1 cup carrots grated
  9. 1 tsp orange rind grated
  10. 1 egg
  11. 1 cup milk
  12. 1/4 cup molasses
  13. 1/4 cup melted butter
  14. 1/2 cup raisins
  15. 1/4 cup chopped nuts
Instructions
  1. Measure dry ingredients into a large bowl.
  2. Stir in carrots and orange rind.
  3. In a small bowl, beat eggs, milk, molasses and butter.
  4. Add to dry ingredients.
  5. Stir to moisten.
  6. Fold in raisins and nuts.
  7. Fill greased muffin tins 3/4 full and bake at 400F for 25 minutes
