Ingredients
  1. 1 lb Spinach cut up
  2. Sugar to taste
  3. 1 whole onion
  4. Salt to taste
  5. 2 quarts water
  6. Juice of one lemon
  7. 1 egg beaten
  8. 1/2 cucumber diced
  9. 3 shallots diced
Instructions
  1. Add spinach, salt and onion to water.
  2. Cook for 1/2 hour.
  3. Remove onion and let cool.
  4. Add beaten egg, sugar, lemon juice, shallot and cucumber to soup.
  5. Serve cold with sour cream.
