Ingredients
- 1 cup flour
- 1 cup oat bran cereal
- 2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tsp cinnamon
- 1 cup brown sugar
- 1 1/2 cups shredded carrots
- 2 large apples shredded
- 1 cup chopped pecans
- 1/4 cup oil
- 1/2 cup skim milk
- 4 egg whites beaten
- 1 tsp vanilla
Instructions
- Heat oven to 375F.
- Combine flour, oat bran, baking powder, baking soda, salt, and cinnamon in a large bowl.
- Stir in sugar.
- Add carrots, apples and pecans; mix together.
- Make a well in the centre of the mixture and add oil, milk, egg whites and vanilla.
- Stir until moistened.
- Fill muffin paper cups 3/4 full and bake for 20 to 25 minutes.
