Ingredients
  1. 1 cup flour
  2. 1 cup oat bran cereal
  3. 2 tsp baking soda
  4. 1 tsp baking powder
  5. 1/2 tsp salt
  6. 2 tsp cinnamon
  7. 1 cup brown sugar
  8. 1 1/2 cups shredded carrots
  9. 2 large apples shredded
  10. 1 cup chopped pecans
  11. 1/4 cup oil
  12. 1/2 cup skim milk
  13. 4 egg whites beaten
  14. 1 tsp vanilla
Instructions
  1. Heat oven to 375F.
  2. Combine flour, oat bran, baking powder, baking soda, salt, and cinnamon in a large bowl.
  3. Stir in sugar.
  4. Add carrots, apples and pecans; mix together.
  5. Make a well in the centre of the mixture and add oil, milk, egg whites and vanilla.
  6. Stir until moistened.
  7. Fill muffin paper cups 3/4 full and bake for 20 to 25 minutes.
